Ingredients
- 1 1/2 pounds silver salmon fillet
- 1 tablespoon Dijon mustard
- 1 tablespoon maple syrup
- 1 teaspoon lemon zest
- 1 tablespoon oil
- Black pepper
Method
- Check for pin bones and keep the fish cold.
- Set on oiled foil and spread with mustard, maple, and lemon zest.
- Seal loosely and cook over steady medium heat.
- Cook the thickest part to 145 F and open away from steam.
