Ingredients

  • 1 1/2 pounds silver salmon fillet
  • 1 tablespoon Dijon mustard
  • 1 tablespoon maple syrup
  • 1 teaspoon lemon zest
  • 1 tablespoon oil
  • Black pepper

Method

  1. Check for pin bones and keep the fish cold.
  2. Set on oiled foil and spread with mustard, maple, and lemon zest.
  3. Seal loosely and cook over steady medium heat.
  4. Cook the thickest part to 145 F and open away from steam.
