Recipe reviewed 2026-07-21 · Identification and food safety are part of the method
Ingredients
- 2 packed cups positively identified sea asparagus
- No added salt at first
- Optional: 1 teaspoon dried lemon zest
Method
- Harvest only where legal and from demonstrably clean water.
- Rinse, remove grit, and dry the surface thoroughly.
- Dry in one layer at 95-115 F; humid conditions may require up to 125 F.
- Continue until every piece is brittle with no soft or cool spots, then cool completely.
- Grind fine and taste before adding plain salt.
- Store airtight; discard if it softens, smells off, or shows mold.
Field note & safety
Positive identification and a clean, legal harvest site come first. Rinsing removes grit but cannot remove contaminants absorbed from polluted water.
