Huckleberry Skillet Compote

A quick huckleberry compote for oats, pancakes, yogurt, or toast.

Ingredients
- 2 cups positively identified huckleberry
- 2 tablespoons water
- 1-3 tablespoons sugar or maple syrup
- 1 teaspoon lemon juice
- Pinch of salt
Method
- Rinse and sort the berries, removing leaves, stems, insects, and damaged fruit.
- Simmer the berries with water for 6-10 minutes until they collapse and thicken.
- Sweeten to taste, then add lemon and salt.
- Cool and refrigerate promptly.
