Huckleberry Skillet Compote

A quick huckleberry compote for oats, pancakes, yogurt, or toast.

Ingredients

  • 2 cups positively identified huckleberry
  • 2 tablespoons water
  • 1-3 tablespoons sugar or maple syrup
  • 1 teaspoon lemon juice
  • Pinch of salt

Method

  1. Rinse and sort the berries, removing leaves, stems, insects, and damaged fruit.
  2. Simmer the berries with water for 6-10 minutes until they collapse and thicken.
  3. Sweeten to taste, then add lemon and salt.
  4. Cool and refrigerate promptly.
