The one the whole mushroom world waits all winter for. Morels are a spring-only prize with a honeycombed cap and a hollow core, famous for erupting by the thousand in the year after a forest fire. Finding a good burn morel patch is a genuine event, and the flavor — deep, nutty, meaty — earns every bit of the obsession.

Identifying

  • honeycombed / pitted conical cap, tan to grey to dark brown
  • completely hollow from cap tip to stem base when sliced lengthwise — this is the critical test
  • cap is attached to the stem at its base, not hanging free like a skirt
  • false morel warning: Gyromitra has a wrinkled brain-like (not pitted) cap and is stuffed/chambered inside, not hollow — and it is toxic

Facts

  • never eat raw — even true morels contain compounds that upset stomachs until thoroughly cooked
  • fire morels flush in huge numbers the first spring after a burn, then fade in following years
  • slice lengthwise every time: hollow all the way through is the true morel's signature
