A mango blushed rose over gold — one of the countless regional cultivars of the world's most-eaten tropical fruit. Vietnamese mangoes run from tart-green-and-dipped-in-chili-salt to lusciously sweet and ripe; this pink-shouldered one lands on the sweet, floral end.

Identifying

  • oval fruit with a pink-to-rose blush over yellow-gold skin
  • soft, fiberless (or nearly), deep-orange flesh around one large flat stone
  • rich, floral, honeyed aroma when ripe; gives to a gentle squeeze
  • the flat central seed tells every mango apart from round stone fruits

Facts

  • mango is the most consumed fresh fruit on the planet, with hundreds of named cultivars
  • in Vietnam the green unripe fruit is a savory snack with chili-salt, the ripe one a dessert
  • in the same family as cashews and poison ivy — the skin's sap can irritate sensitive skin
