How to Clean a Giant California Sea Cucumber

A giant California sea cucumber yields two different kitchen ingredients: five pale longitudinal muscle bands and the cleaned body wall. The muscle strips are the easiest part to identify. The body wall needs thorough rinsing and a longer simmer or braise to become tender.

What you need

  • Clean cutting board with a rim
  • Sharp fillet or chef's knife
  • Kitchen shears
  • Spoon or gloved fingers
  • Two clean bowls, one over ice
  • Small brush for the body wall

Step-by-step cleaning

Keep it cold and work promptly

Place the harvest on ice or in a cold cooler and clean it as soon as practical. Use a separate board and utensils for raw seafood, and wash hands before and after handling.

Identify the underside

Place the sea cucumber with the smoother underside and rows of tube feet facing up. This gives you a controlled surface for opening the body without cutting deeply into the opposite wall.

Open it lengthwise

Cut off the extreme ends if needed, then make a shallow lengthwise slit through the underside from near one end to the other. Open the body wall like a book.

Remove the viscera

Scoop out the digestive tract, respiratory structures, and other loose internal organs. Keep them separate from the edible muscle bands and body wall unless you are following a verified preparation for a specific organ.

Separate the five muscle bands

Look for five long, pale strips running lengthwise inside the body wall. Peel or trim them free, place them in a clean bowl over ice, and rinse away any attached membrane or grit.

Scrub and rinse the body wall

Rinse the opened body wall inside and out with cold potable water. Scrub away slime, sand, and remaining entrails, then inspect the folds carefully so no grit remains.

Cook before serving

For the body wall, bring salted water to a boil, reduce to a simmer, and cook about 30–45 minutes until it shrinks and becomes dense and springy. It can then be braised longer for tenderness. Cook seafood thoroughly and keep cooked food separate from raw tools and surfaces.

Chill or freeze

Use the prepared meat immediately or cool it quickly in a shallow clean container. Refrigerate at 40°F or below and use within two days, or freeze for longer storage.

Washington harvest rules

The season and daily-limit summary below is for California sea cucumbers in Washington. Regulations can change, and marine preserves may add closures beyond the general season.

  • Washington currently lists a daily personal-use limit of 18 California sea cucumbers with no minimum size.
  • The current personal-use season is July 1 through the last day of February, with multiple closed marine areas and exclusion zones.
  • Legal personal-use gear is by hand or a hand-operated, nonmechanized tool that does not penetrate the animal.
  • Carry the required license, keep each harvester's limit in a separate container, and recheck live WDFW rules and emergency changes before harvesting.

Handling and food safety

FDA guidance says to refrigerate seafood at 40°F or below and use it within two days or freeze it. Wash hands for at least 20 seconds after handling raw seafood, wash boards and utensils with hot soapy water, and keep raw seafood separate from ready-to-eat food. FDA lists 145°F as the general cooking temperature for most seafood.
